1-(8oz) package dried elbow macaroni
cup butter or margarine
cup all-purpose flower
2 cups whole milk
1 tsp. Salt
8 oz block of American cheese from deli, not the slices
Paprika (optional)
Shake of hot sauce (optional)

Prep time: 10 minutes
Ready in: 35 minutes
Yields: 6-side dish servings

1. Cook macaroni according to package directions, omitting salt. Drain and set aside.
2. Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly until thickened and bubbly. Stir in salt and cheese, stirring until cheese melts.
3. Stir macaroni into cheese sauce and pour into a lightly greased 2-quart baking dish or an 11x7-inch baking dish. Sprinkle with paprika if desired. Bake uncovered at 350 degrees for 25-35 minutes or until bubbly. Let stand 5 minutes before serving.
