1 cup diced onions
1 cup diced celery
2 cups diced potatoes
2 cans chopped clams (I generally use three)
3/4 cup flour
1 quart half and half milk
1-1/2 Tbs. red wine vinegar
1-1/2 tsp. salt
1-1/2 tsp. pepper

Directions:
Directions:
Cook veggies with butter, clam juice and red wine vinegar until tender (but firm). I sometimes add little flowerets of cauliflower or broccoli and sometimes some diced carrots.

Blend flour with a little bit of melted butter and stir until smooth. Then slowly add half and half and cook until it begins to thicken (stirring constantly). Combine with veggies and clams. Heat and serve.
