2 cups sugar
3 cups flour
3 eggs
1 tsp. vanilla
1/4 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
2 cups grated zucchini
1 cup oil
1 cup chopped walnuts (optional)
3-4 tsp. cinnamon

Directions:
Directions:
Beat eggs until foamy. Add vanilla, oil and sugar. Mix well. Add zucchini, baking powder, flour, salt, baking soda, nuts (if desired) and cinnamon. Mix well. Pour into 3 medium loaf pans (or 2 large loaf pans) that have been greased and floured. Bake at 350º for about 1 hour. Test with toothpick to make sure middle is done. Remove from pans and set on cooling rack.
