2 3/4 c. all purpose flour
1 tsp. baking soda
1/2 tsp. fine salt
1/2 c. shortening
8 tbsp. (1 stick) butter, softened
1 1/2 c. sugar, plus additional 3 tbsp.
2 large eggs
1 tbsp. ground cinnamon

Preheat oven to 350º.
Sift flour, baking soda, and salt into small bowl.
With handheld or standing mixer, beat the shortenning and butter in a separate large bowl. Add the 1 1/2 cups sugar, continue beating until light and fluffy (about 5 min.). Add the eggs, 1 at a time, beating well as you go. Add the flour mixture and blend until smooth dough.
Mix 3 tbsp. sugar with the cinnamon in a small bowl.
Roll dough by hand into 1 1/2 inch balls. Roll balls in cinnamon sugar. Flatten balls to 1/2 inch disks on cookie sheet, space evenly. Bake about 12 minutes, until light brown, but still moist in center. Cool before serving.
