Stuffed Fish Recipe

2 Tbsp butter
9 oz salad shrimp
3 oz mushrooms
1 large onion, minced
2 Tbsp chopped parsley
3 lbs fish fillets (ie: roughy or sole)
˝ tsp salt
Dash pepper
Dash paprika
2 cans cream of mushroom soup
1/3 c cooking sherry
˝ c grated cheese
˝ c water

Sauté shrimp, mushrooms and onions in butter until onion is soft. Rub seasonings on both sides of fish. Spoon shrimp mixture on short end of each fillet and roll fish up, securing with toothpick(s) if necessary. Place rolls in baking dish. Combine soup, sherry and cheese, and pour over fish. Sprinkle with cheese and refrigerate for at least an hour. Bake at 400° for 30 minutes.
