3 tbsp flour
½ tsp salt
¼ tsp pepper
1 lb skinless, boneless chicken breasts
2 tbsp olive oil
1 medium onion
1 tbsp butter or margarine
1 c chicken broth
3 tbsp lemon juice*
½ tsp thyme

Lemon wedges and fresh chopped parsley to garnish
Mix flour, salt and pepper in a large bag and toss chicken breasts till lightly coated. Set aside extra flour. Brown chicken in a large skillet over medium heat (about 5 minutes per side). Transfer chicken to a plate. In skillet, melt butter and cook onion (about 3 minutes) until soft, stirring to prevent scorching. Stir in reserved flour and cook until flour is completely blended (about 1 minute). Add broth, 2 tbsp lemon juice and thyme to the skillet and bring to a boil, stirring constantly. Return chicken to pan, reduce heat to medium/low and cover. Simmer for about 5 minutes, until chicken is completely cooked. Remove chicken from the pan and stir in remaining 1 tbsp lemon juice. Pour sauce over chicken. Garnish with lemon wedges and parsley and serve.

*Once I made this with lemons fresh from the orchard and served a lemon cream pie for dessert using the same lemons. MAN was that good!!!!!
