3 lbs frying chicken
2 Tbsp shortening
1½ c dry brown rice
¼ c blanched almonds
1 Tbsp chopped pimento
2 onions, chopped
2 c chicken boullion
Pinch salt
Pinch sugar
¼ tsp pepper
Thyme, if desired

Directions:

Fry chicken, in shortening, until brown. Remove from heat. In greased 9x13” pan, add rice, almonds and veggies. Arrange chicken over the top and pour broth over top. Cover and bake at 400° for 1 hour, checking occasionally to make sure it doesn’t dry out. Add additional broth, if necessary.

While we were living in Redmond, it seems our family made great Guinea Pigs for Mom to experiment on with all her Relief Society recipes. This particular recipe made a very strong impression on the family, so Dad affectionately re-named it. The name became synonymous with any distasteful concoction Mom brought home from her Relief Society experiences.
