10 medium red potatoes, peeled and cubed
6 tbsp butter
1 medium onion, chopped
2 c grated cheddar
2 c sour cream
Salt and pepper to taste

Directions:
Directions:
Boil potatoes until firm, but cooked through. Drain and set aside. In large, heavy pan, melt butter and sauté onion until soft. Add cheese, stirring frequently. When cheese is melted, remove from heat and stir in sour cream. Add potatoes and toss until well coated and all is evenly distributed. Pour into 9x13” pan and top with more grated cheese. Bake at 400° for 20 minutes.
