12 oz marinated artichoke hearts
1 small, chopped onion
1 clove garlic
5 eggs
¼ c dry bread crumbs
1 c grated zucchini
½ tsp salt
1/8 tsp pepper
1/8 tsp oregano
2 Tbsp parsley

Directions:
Directions:
Drain the marinade from artichoke hearts and pour half into frying pan. Chop up artichokes and set aside. Add onion ad crushed garlic to pan and sauté. Add zucchini and cook another 5 minutes. Add artichokes and bread crumbs. In a bowl, beat the eggs and add cheese, seasonings and contents of pan. Pour into casserole and bake at 350° until set.
