1 medium head cauliflower
1¼ c water
½ tsp salt
¼ c butter
2/3 c chopped onion
2 Tbsp flour
2 c chicken broth
2 c light cream or milk
½ tsp Worcestershire sauce
¾ tsp salt
1 c grated cheddar cheese
Chives and/or parsley for garnish, optional

Directions:
Directions:
Break cauliflower into tiny florets and cook in water and salt. Drain, reserving liquid. In 3 qt saucepan, melt butter and add onion, cooking until onion is soft. Sprinkle flour over cooked onion and blend well. Slowly add broth, stirring constantly to avoid lumps. Continue heating and stirring until mix comes to a full boil. Add cream and 1 c of reserved water from cauliflower. Add Worcestershire sauce, ¾ tsp salt and cooked cauliflower. Heat, but DO NOT let boil. Stir in cheese and serve garnished as desired.
