3 medium green zucchini
3 slices fried bacon
1/4 c chopped onion
1 1/2 c grated Swiss cheese
1/2 c chopped tomato -seeds out to remove excess liquid to dish
1 tsp season salt

Directions:
Directions:
In a fry pan sauté onion with some butter. Boil the zucchini for 5 - 7 minutes until somewhat tender. Then slice them in half length wise and scoop out the center so there is some side and bottom left to the inside of the zucchini. Save out the center portion. Chop that up. Then mix in a small bowl the crumbled bacon, tomatoes, Swiss cheese, and zucchini center, and season salt. Blot the scooped out zucchini with a paper towel and then place the mixture in the boat. Top with extra cheese and bake at 350º for 25 to 30 minutes until cheese is melted.

These are awesome but they can be a bit watery so once they are cooked I tip them a little to drain some liquid before serving.
