Hearty Chicken Noodle Soup Recipe

2 tsp chicken soup base
3 c chicken soup stock
2 c chopped celery
2 c chopped carrots
3/4 c chopped onion
2 cans cream of chicken soup
½ c milk
2 c cooked, diced chicken
2½ oz (about 4 c) cooked noodles or homemade noodles (recipe below)
Salt and pepper to taste


For Homemade Noodles:
4 eggs
2 c flour
½ t salt

Directions:
Directions:
Heat chicken soup base and stock together. Add carrots, celery, and onions and simmer until veggies are tender. Add cream of chicken soup and milk. Add cooked chicken and noodles. Salt and pepper to taste.

To make Noodles:
Combine flour and salt in bottom of bowl. Add eggs and combine. Knead until smooth and roll out on floured surface until thin. Cut with a pizza cutter into strips and let dry about three hours or so, flip and let dry 2-3 more hours. Add to soup at the end and let the noodles cook in the soup. This takes quite a while, at least 20 min., I always add extra liquids when I use these noodles as they absorb a lot (water, broth or milk). Test the noodles for doneness occasionally. They make the soup delicious and very filling.
