6 large baking potatoes
2 tsp cooking oil
1 tsp chili powder
Hot pepper sauce
2/3 c chopped cooked bacon
1 medium tomato, finely chopped
2 Tbsp finely chopped green onion
1 cup shredded cheddar cheese
½ c sour cream

Directions:
Directions:
Scrub potatoes and prick with a fork. Bake or microwave until almost tender. Cool. Halve each potato lengthwise and scoop out, leaving a ¼” shell. Combine cooking oil, chili powder and a few dashes pepper sauce. Brush insides of potatoes with oil mixture. Cut potatoes in half lengthwise and put on baking sheet. Sprinkle potatoes with bacon, tomato and green onion. Top with cheese. To make ahead, cover and chill for up to 24 hours. Bake at 450º for 10 to 12 minutes until cheese is melted and potatoes are heated through. Serve with sour cream.
