3 c shredded lettuce
15 oz can black beans, rinsed and drained
½ c chopped red and/or yellow bell peppers
¼ c sliced green onions
1 c sour cream
2 finely chopped jalapenos
1 tsp grated lime peel
1 c chunky salsa
½ a medium avocado, coarsely chopped
2/3 c shredded cheddar and/or jack cheese
1/3 c chopped olives
1 Tbsp fresh cilantro, chopped fine
Tortilla chips

Directions:
Directions:
Line a 12” platter with shredded lettuce. Combine beans, peppers and onion and spoon over lettuce, leaving a border. Dollop sour cream over bean mixture and gently spread, leaving a border. Sprinkle with jalapeno and lime peel. Drain excess liquid from salsa. Stir in avocado and spread over sour cream layer, leaving a border. Sprinkle cheese over the top. Garnish with olives and cilantro. Serve immediately or cover and chill for up to 6 hours. Serve with tortilla chips.
