2 c cooked and chilled long grain rice (NOT INSTANT)
16 oz can red kidney beans, rinsed and drained
1 granny smith apple, julienned in thin strips
1 avocado, chopped
1/2 c red pepper, chopped
1/3 c (or to taste) red onion, chopped


Dressing:
1/4 c Thousand Island dressing
1 Tbsp vinegar
2 Tbsp olive oil
4 tsp lemon juice
1 tsp prepared mustard
Salt and pepper to taste

Directions:
Directions:
Combine salad ingredients in a large bowl. Mix dressing in a shaker and toss into salad.
