CAKE:
Mix all ingredients in large mixer bowl. Measure into bowl;
2 1/2 C. Flour 1/4 tsp. Baking Powder
2 C. Sugar 1 tsp. Cinnamon
1 1/2 tsp. Soda 1/2 tsp. Cloves
1 1/2 tsp. Salt 1/2 tsp. Allspice

ADD:
1 1/2 C. canned Applesauce 2 lrg. Eggs
1/2 C. Water 1 C. Raisins
1/2 C. Crisco, shortening 1/2 C. Walnuts

PENUCHE FROSTING
1/2 C. Butter/Margarine 1/4 C. Hot Milk
1 C. Brown Sugar, packed 3 1/4 C. Powdered Sugar

Melt butter in saucepan, stir in brown sugar. Heat to boiling, stirring constantly. Boil and stir over low heat 2 min. Cool to lukewarm about 15 min. Stir in milk, beat smooth. Gradually stir in enough powdered sugar. Place in pan of ice water. Beat until spreading consistency. If frosting gets too thick, heat slightly.

Grease and flour, angel food cake pan, which is best with this cake. Blend all on low 1/2 min., scraping constantly. Beat on High speed 3 minutes scraping occasionally.
Bake 1 Hour at 350º. Check by inserting toothpick. If moist, bake for another 8-10 min. until the toothpick comes out clean. Cool, remove from pan and frost with Penuche Frosting.

For a family party, at Marie's, my job was to make a cake. I got up very early and found I had no applesauce. Woe is me!!! Too early to go to Lagro to the grocery. I fired up that one little lonesome brain cell, and came up with a winner. Voile'! I found a can of pumpkin and went to work. Lawrence was always my best customer when it came to food. Lawrence came up, gave me a big hug and announced loudly, that was the very best "applesauce" cake I had ever made. I never did tell anyone about the pumpkin.
