1 lb. penne pasta
2 tbl. olive oil
4 - chicken breasts, cut into bite size pieces
1 tbl. ground cumin
2 tbl. chili powder
1 large onion
3 garlic cloves, chopped
1 jalapeno, chopped
2 tbl. butter
2 tbl. flour
2 c. milk
2-1/2 c. shredded cheddar cheese
2 tbl. cilantro
2 tbl. parsley

Directions:

Cook pasta according to the directions, drain and set aside.

In a large skillet over medium heat, add the oil. Season chicken with cumin, chili poweder and salt and pepper. Add the seasoned chicken to the pan and cook until lightly brown. Add the onion, garlic, and jalapenos and continue to cook for 5 minutes.

In a medium sauce pot melt the butter and add the flour - cook 1 - 2 minutes over moderate heat and then whisk in the milk. When the milk comes to a bubble, stir in the cheese, cilantro and parsley. Remove from the heat and pour the cheese sauce over the pasta and then add the chicken mixture. Mix well

Transfer to a baking dish and bake in a 350º oven for 1/2 hour, until browned and bubbly.
