8 lbs chicken wings or drummettes. If you use the wings, get the kind with the wing tips cut off.

1c. fresh lime juice
1c. apricot preserves
1c. soy sauce
3/4 c. sugar
4 large garlic cloves

2 large disposable roasting pans

Directions:
Directions:
Preheat oven to 425º
Arrange wings in single layers on each roasting pan. (They are very messy so you don't want to use regular pans) Puree the remaining ingredients in a blender and pour over wings. Cook for 45 minutes, then turn over wings and switch positions of pans in oven. Cook for 50 minutes to 1 hour more, or until the syrup is thick and sticky. ( if the sauce isn't getting sticky you can pour the liquid into a saucepan on the stove add a little sugar and stir until it carmelizes, and then pour back over wings)
