5 lbs. potatoes
8 tbsp butter
1/4 cup flour ( prefer Wondra)
2 t salt
2 t pepper
3 1/2 cups milk
2 onions, finely chopped

Directions:
Peel and thinly slice potatoes. Cover with water and bring to a boil for 5 minutes. Drain. Heat butter in a sauce pan on low. Add onions and heat until translucent. Add flour, salt, and pepper. Stir together. Remove from stove and add milk. Return to heat and bring to a boil stirring constantly until mixture thickens - about one minute. Arrange 1/2 of the potatoes in a buttered 9 X 12 pan, pour 1/2 of the white sauce over the potatoes. Add another layer of potatoes and the remaining white sauce. Place 2 tbsp butter on the top. Cover and bake for one hour in a 350 degree oven. Remove the foil the last 10 minutes of baking. Let stand for 5 minutes before serving. A variation of this recipe is to add 2 cups of shredded cheddar cheese to the white sauce mixture. For the last 15 minutes, cook uncovered and add a mixture of 1 cup of shredded cheddar cheese and 1/2 cup fine breadcrumbs to the top. Cook until the top is crispy and golden brown.
