Ingredients: 8-10 eggs (depending upon the size) a little bit of milk salt and pepper to taste 1 tube of Jimmy Dean hot breakfast sausage 1 package of home fries (Simply potatoes or Bob Evans) 2 cans or 2 packages of white country gravy 1 cup of shredded cheddar cheese 1 package of Oscar Mayer real bacon bits

Directions:Whisk together eggs and a little bit of milk (like you were making scrambled eggs). Add salt and pepper to taste. Poor the eggs into a greased casserole dish and bake at 325 F until the eggs are hard (like an omlette). While the eggs are cooking, cook your breakfast sausage and break it all apart. Also cook your home fries and your gravy. When the eggs are done, spread your homefries on top of the eggs, and then the sausage on top of the home fries. After your gravy is done, pour it over the entire casserole. Sprinkle the cheddar cheese on top of the gravy and then sprinkle the bacon bits on top of the cheese. You may want to put back in the oven for 5-10 minutes. |

Notes: ** I have cooked the sausage and potatoes the night before and placed them all in one plastic container. The next morning, I just re-heat them in the microwave. This really speeds up the process in the morning. **
