1 large family pack of hamburger meat (2+ lb)
8 slices bread
1 cup milk
2 eggs
1/2 cup finely chopped onions (or onion powder)*
2 T chili powder
salt and pepper
1 T garlic powder
* Vanessa Faith won't eat onions!

Directions:
Have enough aluminum foil ready to wrap mixture into individual "buffalo surprises". Soak bread in milk. Add to hamburger meat and mix together well. Add eggs and seasonings. Divide into family size servings and wrap into a loaf for freezing. I usually have enough to make 6 to 8 small loaves. Date the aluminum foil and freeze. I will pop one into a pan still frozen and bake at 350º for about an hour, uncovering after 40 to 45 minutes so it will brown on top.

Vanessa Faith HATES meat loaf. But when she was little, she would beg for "Buffalo Surprise" for dinner. One day Clint told her that Buffalo Surprise was meat loaf and she hasn't liked it since!
