1 qt half and half
1 pt heavy whipping cream
6 six ounce cans minced or diced clams
1 onion, finely chopped
1 20oz bag frozen diced potatoes (or 3 cups diced potatoes, parboiled)
salt
pepper
cayenne pepper
4 tbsp butter
3 tbsp flour

Directions:

melt butter overy medium heat in a large stock pot. Add diced onions and sweat until translucent. Add flour and stir to coat. Stir for two minutes, then add clams (with clam juice) and frozen potatoes. Stir, then add half and half as well as heavy whipping cream. Stir occasionally. Bring to a simmer. Do not boil. Salt and pepper to taste. Cayenne pepper to taste.

grated carrots make a nice addition. Shallots and garlic are also good flavor enhancers. Substitute chicken for clams, and add corn for a chicken corn chowder.
