6 Granny Smith (Pippin, other cooking apple)
2 tbls flour
3/4 c sugar
1 tsp cinnamon
bit of butter (optional)
2 crust pie pastry unbaked

Directions:
Directions:
Peel and slice apples to about 1/4 inch sections. Place in unbaked pie shell in metal pan, pile high. Mix sugar, flour, and cinnamon, pour over apples. Tap lightly if too much is on tip top. Dot with butter if you wish. Cover with top pastry, seal edges, make small "V" cut in center, and fold back for steam to escape. This will help avoid pie running over at the edge. Bake about 1 hour at 400º or until syrup is clear.
