1 pound boneless chicken breast
2 tbps butter
1 large onion ---diced
3 stalks celery---diced
4 carrots---diced
I cup fresh mushrooms ,sliced
6 bouillon cubes and six cups water or 6 cups chicken broth,
1 bay leaf
1 tsp curry powder
1/2 tsp cardamom
1 tsp thyme
1 tsp basil
2 tsp salt
1 tsp black pepper
2 cups uncooked noodles

wash drain chicken , cut in 1/2 inch chunks melt 2 tablespoon butter in skillet, add chicken cook until chicken is slightly brown
in large pot melt 1 tablespoon butter saute onions, celery and carrots until onions are clear add 6 cups chicken broth cover: simmer 20 min, add spices and salt
add mushrooms to browned chicken saute about 2 min. add chicken and mushrooms to vegetables bring to boil, add 2 cups uncooked noodles bring back to boil, cover pot and turn off heat. let set for 20 minutes, to steam the noodles...

I shared this recipe with my nephew prosecuting attorney William Sadler .. he made the soup for a rally at the court house in Princeton WV... a judge upon eating the soup, said, "best damn chicken soup I ever ate" hence the name for this home made soup.. sharing recipes with family and friends adds to the enjoyment of the best or the simplest recipes..
