6 lbs prime rib
4 cloves garlic, halved
Salt and pepper
2 springs fresh rosemary, minced

Pre-heat heat oven to 300 to 325 degrees. Place prime rib fat side up in a shallow roasting pan. With paring knife make small slits on top of roast. Pull knife back and place a piece of fresh garlic in slit. You can use more garlic if you like, to as many slits as you like over top of roast, salt and pepper. Sprinkle fresh rosemary over top. Remember a little rosemary goes a long way. Place roast in oven and bake 1 1/2 to 2 hours or until meat thermometer reads med rare 135 degrees. Meat will continue to cook when pulled from over cover with foil and let rest 20 to 30 minutes before carving.
