1lb crab meat
3/4 cup breadcrumbs
1 egg
1/4 cup mayonnaise
1/4 teaspoon Old Bay Seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon worcestershire sauce
1 teaspoon mustard

Mix all ingredients EXCEPT for the crab. Rinse the crab meat and just check to make sure there are no shells fragments. Drain well. Then add the crab meat and GENTLY but thoroughly mix it together. If it seems too dry, add a little more mayonnaise. Roll the crab mixture into walnut sized balls. ( It does help to put in the fridge for about 1/2 hour before frying).

Pour olive oil in a pan ( enough to cover the crab balls about 1/2 way). Once the oil is hot, add the crab balls. Cook on one side until light brown and
then turn 1/2 way through and cook the opposite side. Drain on paper towels and serve with cocktail sauce. Also good is a mustard sauce or a remoulade sauce. These can be made ahead of time. They freeze well after they are browned. Reheat in oven at 400 F until hot all the way through.
