Ingredients:  
Quantity of each ingredient per your personal taste:
2 - 3 Peeled, Sliced carrots
1/2 Cup Chopped onions
1 small can, chopped black olives
1 ripe Avocado
3 Tablespoons lemon juice (fresh squeezed) 1/4 1/4 Cup Vegetable Oil
Salt (to taste)
Black Pepper (fresh ground to taste)
Red leaf lettuce, cut or torn in bite sized pieces.

Directions:

Place the following ingredients in a salad bowl: carrots, onion, and olives. In a separate small bowl, mash avocado with lemon juice, oil, salt and pepper. Combine in salad bowl with other ingredients except lettuce. Just before serving, add lettuce, toss lightly and serve.
