1 cup all-purpose flour
1 tsp. baking powder
2 eggs, separated
1 tbsp. granulated sugar
1 cup milk
1 tsp. vegetable oil
2 bananas, sliced
Cooking spray
Raspberries and maple syrup, to serve
Confectioners' sugar, for garnish

Sift the flour, baking powder and a pinch of salt into a bowl and make a well in the center. In a second bowl, whisk the egg yolks, sugar, milk and vegetable oil together. Pour into the dry ingredients, whisking until just smooth - don't over-mix. Set the batter aside to rest in the fridge for 30 minutes.

Gently stir the banana slices into the batter. Beat the egg whites using an electric mixer until soft peaks form, then gently fold into the batter.

Heat skillet or griddle over medium heat. When hot, grease pan with cooking spray and working in batches of 2-3, add 2 tbsp. of batter to skillet for each pancake. Cook 2 minutes until golden brown, then turn and cook another minute or until golden brown. Repeat with remaining batter, wiping out the skillet between batches and adding more cooking spray when necessary.

Serve the pancakes warm with raspberries, maple syrup, and a sprinkling of convectioners' sugar.

Banana pancakes never appealed to me until I saw the picture of this recipe. The raspberries and confectioners' sugar really make this recipe, so don't leave them out!
