3 medium zucchini
1/8 tsp. Paprika
1 tbsp butter
1 egg, beaten
½ c sour cream or yogurt
1 tbsp. Chopped chives
½ c grated sharp cheese
½ c cracker crumbs
1/2 tsp salt

Directions:
Directions:
Thinly slice zucchini. Place in a greased 1 1/2 quart casserole. Melt butter; add sour cream, cheese, salt, paprika; cook over low heat, stirring constantly until cheese is melted. Remove from heat and stir in egg and chives. Add to zucchini and mix well. Toss crumbs with 2 tbsp melted butter; place over zucchini. Bake in 350 degree over for 30 minutes or until zucchini is tender.
