1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. mashed bananas
1 1/4 c. flour
3/4 tsp. baking soda
1/2 t. salt

Directions:
Directions:
Cream shortening and sugar. Add eggs one at a time beating well. Stir in bananas. Mix flour, baking soda, and salt. Add to banana mixture. Pour into greased 9 x 9 pan. Bake 350º F for 30-35 minutes. Serve warm with butter or chill and top with whipped cream. *Applesauce can be substituted for the shortening to reduce the fat content.

This is a favorite comfort food for Bill and Meg. It reminds them of Barb. The recipe was from a neighbor, Betty Ptasnik, in Peoria.
