3 peeled, sliced carrots
2 tbsp minced onions
2 tbsp softened butter
12 Ritz crackers, crushed
Grated cheddar or swiss cheese

Directions:
Directions:
Cook carrots in salted water until almost done. Drain and save liquid, coarsely. Mash. Add crushed crackers, onion, butter, 2/3 c reserved liquid. Mix well. Place in buttered dish 9x7 cover with cheese. Bake 450 degrees 15 minutes. Longer at 350 if made ahead. Dried onions can be used is wished or not at all.
