1 (2-oz) pkg of sun dried tomatoes (3/4 cup)
1 t olive oil
¼ cup finely chopped green onions
2 garlic cloves minced
¼ cup of dry sherry
1 T lemon juice
1 lb of fresh or frozen shelled, deveined cooked large shrimp (thawed)
1 T finely chopped fresh basil

In a small bowl, soak tomatoes in 1 cup of boiling water for 5 minutes. Drain the tomatoes and chop. ** If you don’t want to use the dry ones, you can use the ones packed in oil, but I would rinse the oil off, pat them dry, and then chop them up. **

I large skillet, heat old over medium heat until hot; Add green onions and garlic; Cook and stir 1 minute; Add tomatoes, sherry and lemon juice; Cook and stir about 2 minutes or until liquid is reduced; Add shrimp and basil; Cook and stir until thoroughly heated
