4 eggs
4 egg yolks
3/4 c flour
1 TBs. sugar
4 c. milk
1/2 c butter
2 tsp salt

Orange Maple Sauce For Crepes
1 c. orange jice
2tbs. orange rind
1 c. maple syrup
1/3 c Duracao

Directions:
Directions:
Beat eggs and egg yolks together lightly. Sift flour sugar and salt. Add to eggs. Add milk and beat well. Strain through a fine sieve.

To cook each crepe use crepe pan instructions
Crepes may be made ahead and frozen inbetween sheets of wax paper.

Orange maple sauce for crepes:
Combine ingreds. and let stand at room temp for 1 hour. Heat in chafing dish. Dip crepes in hot sauce, fold in half, then into quarters (lengthwise, and simmer about 5 min.
