6 slices bacon
1 cup cider vinegar
1/3 cup sugar
1 teaspoon salt
1/2 teaspoon black pepper
8 or 9 cups crisp salad greens (bibb, boston)
4 green onions, sliced

Directions:
Directions:
Cook bacon in frying pan until crisp. Remove bacon and set aside. Add vinegar, sugar, salt and black peper to the bacon fat left in pan. Stir to blend and bring to a high boil.

While the dressing is coming to boil, break greens into lage pieces and put them in a large bowl. Add the onions and the crumbled bacon. Toss salad and then pour the boiling dressing over. Toss well and season to taste with more salt and pepper. Serve at once.

This is for fresh spring greens, bibb, romaine, or boston lettuce or a mix of them. Not for iceberg. You can even add some fresh spinach, arugula, and radishes. But don't add tomatoes.
