2 1/2 pounds pole beans
8 cups water
smoked ham hock or salt meat (3 to 4 ozs.)

black pepper

Wash the pole beans and drain well. Trim both ends and remove strings. Snap into 2 or 3 inch long pieces.

Put water in large saucepan or dutch oven. Add the pork and boil for 20 minutes. Add the pole beans, and use a spoon to push them down into the boiling stock. Cover and reduce heat so the beans cook at a brisk simmer.

After 15 or 20 minutes check beans for tenderness and seasoning. Season the beans with salt and pepper. Continue cooking the beans until they are fork tender. Can be up to 2 hours. You just have to keep checking. Drain and serve hot.
