3/4 c. whole-wheat flour
3/4 c. oat bran (or bran flakes)
1/2 c. brown sugar
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
1 egg, beaten
2 T. oil (or applesauce)
1/2 tsp. vanilla
1/2 c. yogurt, any flavor (or sour cream)
1 banana, mashed
1 carrot, shredded

Directions:
Directions:
Combine whole-wheat flour, oat bran, brown sugar,
baking powder, cinnamon and baking soda. In a
separate bowl, combine in order egg, oil, vanilla,
yogurt, banana and carrot. Combine the 2 mixtures just
until moistened. Bake in greased muffin tins at 400º for
18 minutes.
