1/2c Onion, Finely Chopped
1 lg. Ripe Tomato, Peeled and Diced
1 lg. can Chopped Green Chilies
1/2 Clove Garlic, Minced
1 c Chicken Broth
1 1/2 c Half and Half
1 1/2 c Heavy White Sauce
6 oz Monterey Jack Cheese, Shredded

Directions:
Directions:
In a large saucepan, combine onion, tomato, chilies, garlic and
chicken broth. Bring to boil, stirring till veggies are tender.
Remove from heat. Slowly stir in white sauce, stirring constantly.
Stir in cream, add pepper to taste. Gradually add cheese, stir till
melted. Serve immediately.

Heavy White Sauce: 3T butter, 5T flour, 1 1/2 cups of milk. Melt butter
in small pan, add flour and mix well. Add milk and stir until
thickened.
