5c Canned Beef Broth
1c Lentils
2T. Olive Oil
1 lg. Onion, Chopped
1 sm. Green Pepper, Chopped
1 Celery Stalk, Chopped
1 8oz can Tomato Paste
1/4c Purchased Salsa
1 10oz pkg. Frozen Chopped Spinach, Drained

Directions:
Directions:
Bring 4 cups broth and lentils to boil in large saucepan. Simmer till
tender (about 30 min.) Heat olive oil in heavy skillet over med-
high heat. Add onion, bell pepper, celery and saute till tender
(about 10 min.)
Add onion mixture to lentils. Stir in tomato sauce and salsa.
Simmer over med-low heat till very tender (about 30 min.) Thin
soup with additional broth if needed. Stir in spinich and simmer till
heated (about 2 min.) Season with S&P.
