1 - 6 to 8 lb. boston butt
1 - recipe rub
1 - recipe barb-q-sauce

Rub: 1 T. ground black pepper, 2 t. cayenne pepper, 2 T. chili powder, 2 T. ground cumin, 2 T. dark brown sugar, 1 T. ground oregano, 4 T. paprika, 2 T. salt, 1 T. sugar, 1 T. white pepper. Mix together.

Rub roast with rub mix. Plastic wrap and put in fridge from 3 - 48 hours. Put in shallow foil pan. Put on grill with smoking chips. Cook about 3 hours. Remove pan and cover with foil. Put in 325º oven for 2 hours. Remove and put pan in a brown paper bag for 1 hours. Uncover. Cool and pull. Toss with North Carolina Barb-q sauce.
