1 green pepper - chopped
1 med onion - chopped
1 lg can diced tomatoes
1 jar of sliced mushrooms
1 jar of pimentos
3/4 c vegetable oil
1 pkg grated cheddar cheese
1 whole chicken (save broth)
1 pkg spaghetti (we prefer Angel Hair Pasta)

Boil the whole chicken with 2 bay leaves, carrot, celery and 1/2 of the onion, for 45 minutes or until chicken is done salt and pepper to taste. Set aside, when cooled remove and chop up meat from the bones (save the broth). In a skillet place oil, chopped green pepper and chopped onion cook until translucent. Add tomatoes, pimentos and mushrooms. Cook for 10 min more. While this mixture is cooking, boil your pasta, drain and set aside. In a large oven safe casserole dish combine, pasta, cooked veggies, cooked chicken pieces, grated cheese. Mix well and add salt and pepper to taste. Add 1/2 - 1 c of saved chicken broth, depending on what is needed, (You want it moist, some will bake out). Bake at 350º for 45 - 55 minutes.
