1.5-2 C cut up cooked chicken (or one can chunked)
1/2 C chopped celery
1/2 C chopped cucumber (and/or zucchini)
1/4 C sliced green onions (or fine chopped red)
1/2 C halved red grapes (and/or chopped apples)
handful of craisins

1/3 C mayo or Miracle Whip
1 T lemon juice
1 T snipped fresh basil, or 1/2 t dried tarragon or basil

Directions:

Blend sauce ingredients together and toss with the rest.
Can be eaten in a sandwich or plain on lettuce.

We do this quite often with leftover cooked chicken (even KFC!) or it's a great way to use up food storage canned chicken and your last bits of fruits/veggies for a quick lunch. Every batch I make is different and I kind of just eyeball it.
