3/4 c Parmesan cheese
1/2 c dry seasoned bread crumbs

Directions:

Beat together eggs, cheese and bread crumbs. Heat 3 tablespoons oil in a large skillet; spread 1/3 of the mixture in skillet and cook over medium heat until set on the bottom. Roll up (like a jelly roll) and cut into 1" slices. Place in 300º oven and keep warm.

These may sound a little strange when you read it but we had a huge family gathering and my aunt made them for us. They disappeared really fast! I like to use an electric skillet to make them square so they look better when they are sliced!
