2 cup zucchini (peeled & shredded)
3 eggs
1 cup cooking oil
1 tsp salt
1 tsp baking soda
2 cup sugar
3 cup flour
3 tsp vanilla
3 tsp cinnamon
1/4 tsp baking powder
1/2 cup chopped nuts

Directions:

Mix all ingredients well and put into a well greased 8¼"x 5¼"x2¼" bread pan. Bake at 325º for 1hour or until toothpick inserted in center comes out clean. Cool for 5 minutes before removing from pan. Turn out on wire rack to cool.
