½ pd ground beef
¾ c chopped onion
¾ c shredded carrots
¾ c diced celery
1 tsp dried basil
1 tsp dried parsley flakes
4 Tbsp butter
3 c chicken broth
4 c diced peeled potatoes (1 ¾ lbs)
¼ c flour
8 oz processed american cheese, cubed (2 cups)
1 ½ cups milk
¾ tsp salt
½ tsp coarse ground black pepper

Directions:
Directions:
Start with a 3 qt saucepan and brown the beef. Drain off the grease and set off to the side. Using the same pan, saute with 1 tbsp butter, the onions, carrots, celery, basil and parsley until tender. This will be about ten minutes. Add broth, potatoes and beef and bring to a boil. Reduce heat to simmer, cover and cook gently for about 12 minutes. Make sure the potatoes are tender. In a small skillet, melt the butter. Add flour and cook while stirring for about 12 minutes. Make sure the potatoes are tender. In a small skillet, melt the butter. Add flour and cook while stirring for about 4 minutes or until mixtures is bubbly. Add this to the soup. Bring to a boil and stir for about 2 minutes. Reduce to low heat. Add the cheese, milk, salt and pepper. Stir until all the cheese melts. Remove from heat and serve. Freezes well.
