1 cup sugar
1 cup hot water
2 tablespoon cornstarch

Juice of 2 lemons
3 egg yolks

4 tablespoons sugar
1 teaspoon cream of tartar

Directions:
I. Cook sugar, water and cornstarch over low heat until starchy.

2. Pour lemon juice into egg yolks while stirring with a fork. Add some of the hot mixture to egg and lemon, then pour back into saucepan and cook for 5 or more minutes. Cool and pour into cooked pie shell.

Make meringue from egg whites. Beat whites until fluffy and add about 4 tablespoons+ sugar and 1 teaspoon Cream of Tartar. Pile on lemon mixture that has been poured in cooked, cooled pie shell and bake in an oven at 250-300° or until brown.
