1 1/2 lbs lean ground beef
1 cup chopped green pepper
1 1/2 cup chopped onion
salt and pepper to taste
1 tbsp chili powder
6-8 dashes cumin powder
1 lb Velveeta cheese
1 can (5 oz) tomatoes with green chilies
1 head iceberg lettuce
2 medium tomatoes, chopped
1 bag (6 oz) corn chips

Directions:

Brown meat in a large skillet, drain. Add chopped pepper and onion. Season to taste with salt and pepper. Brown for a few more minutes. Add chili powder and cumin. Meanwhile melt cheese over very low heat (or in microwave) and stir in tomatoes and green chilies. In a large bowl, arrange in this order: lettuce (torn in bite sized pieces), chopped tomatoes; crumbled corn chips; hot meat mixture and hot cheese mixture. Serve immediately.

Store leftovers in refrigerator. It is good the next day even if the lettuce wilts.
