1/2 lb lasagna noodles
2 tbsp cooking oil
2 cloves garlic - minced
1 med onion - chopped
1 lb ground beef
1 tsp salt
1/2 tsp pepper
1 tbsp dried basil
1 tbsp dried oregano
2 cans (6 oz) tomato paste
1 1/2 c hot water
2 eggs
1/2 lb ricotta cheese
1/2 lb mozzarella cheese
1/2 c grated Parmesan cheese

Boil lasagna noodles in salted water for about 15 minutes and drain. Heat oil in a large skillet, cook garlic and onion till soft. Add beef and seasonings and cook until beef is done. Add tomato paste and hot water. Simmer 5 minutes and set aside. Beat eggs and blend with ricotta cheese. In a 9x13" baking dish put a thin layer of meat sauce, 1/2 of the noodles, all of the egg and cheese mixture and 1/2f of the mozzarella cheese. Repeat with half of the remaining meat sauce, rest of the noodles, remainder of the sauce and the rest of the mozzarella cheese. Sprinkle with all of the Parmesan cheese. Bake @t 350º for 30 minutes. Let cool 10 minutes before serving.

This is a family favorite. We usually double and freeze one casserole later. When baking frozen dish, thaw to room temperature prior to baking.
