2 c. Nine Bean Soup Mix
2 quarts water
1 lb. ham, diced
1 large onion, chopped
1/2-3/4 t. salt
1 16 oz can tomatoes
1 10 oz can tomatoes and green chilies (Rotel)

Directions:
Directions:
Sort and wash bean mix: place in large pan. Cover with water 2 inches: soak over night. Drain beans: add next 5 ingredients. Cover and bring to a boil. Reduce heat, simmer 1 1/2 hours or until beans are tender. Add remaining ingredients. Simmer 30 minutes stirring occasionally.
