2 c. chicken stock
3 c. finely cut celery, including leaves
2 c. boiling water
1 onion, sliced
2 T. butter
3 T. flour
2 c. milk
1 c. cream
Salt and pepper to taste

Directions:
Directions:
Place celery, stock and water in pressure cooker. Cook for 5 minutes. Rub through sieve if you wish. Cook onion in butter 5 minutes, but do not brown. Add flour, milk and cook until thick. Add celery and the liquid in which it was cooked. Add cream, seasonings and reheat.

If you do not have a pressure cooker, cook the celery in the water until soft.
