3 c cooked turkey
1/2 c chicken broth
1/4 c celery - chopped
1/2 c onion - chopped
10-12 corn tortillas
1 can diced green chilies
1 can cream of chicken soup
1 tsp pepper
1 c shredded cheddar cheese
1 c salsa - any favor
1 c shredded Monterey Jack Cheese

Directions:

Cut turkey and tortillas into 1/2" squares. In med saucepan bring onion, chicken broth and celery, to a boil; reduce heat, cover and simmer, for 5-6 minutes or until vegetables are just tender. In a large bowl stir together undrained onion mixture, cooked turkey, corn tortillas, green chili, soup and pepper. Stir in 1/2 cup of each cheese. Transfer mixture to a lightly greased 13x9" baking dish. Top with salsa and reserved cheese. Bake @ 350º for 30-35 minutes or until heated through. Let stand about 5 minutes before serving.

Fantastic casserole to make when you are having guests for dinner. Can be made ahead and refrigerated until ready to bake it. Add an additional 10 minutes on to baking time if baking right after removing from refrigerator. This is a real keeper!
